Happy Martin Luther King Jr. Day everyone! Did your kids get the day off school today? Mine did and we have been having so much fun today.
First we got up and watched our favorite game shows: “Let’s Make a Deal” and “The Price is Right.” My kids are game show junkies and today was a great day to watch because on “Let’s Make a Deal” the last contestant won the “Big Deal” of the day which was a set of mountain bikes, a trip to Hawaii, AND a brand new car!!
Then on “The Price is Right” it was ‘kids day’ and a dad and his two girls not only won their game with a prize of $5,000 and a car, but they also hit it big at the end of the show by winning BOTH showcases because their bid was within $200 of the actual retail price. They won three trips (one to Australia) and a speedboat. All together they won over $74,000 worth of cash and prizes. I’m telling you: I need to get on some game shows! 😉
After that we went and had lunch with grandma at Red Lobster and we talked about what Martin Luther King Jr. Day is all about.
I was really impressed with what my kids knew and understood about MLK and the Civil Rights movement. I also love hearing from the innocence of a child’s perspective that they just can’t understand why people used to have to use different bathrooms and schools just because of the color of their skin. Or why MLK would get thrown into jail just because he spoke up about being “sick and tired” of the whole thing. It was a great conversation and I love hearing things from my kids point of view. -If only the world really were so simple!!
When we arrived back home, we ate these yummy Red Velvet Cookie Cups for dessert. These were so fun and easy to make.
They start with a cake mix and come together fast. No need to chill the dough. Just mix it up, and scoop it in. This is so easy that a child could do it. In fact, my 7 year old, Alex basically made these himself. He LOVES helping in the kitchen!! If he is in another room in the house, and hears the mixer whirling, he will stop whatever he is doing and come running into the kitchen to wash his hands and throw his “Flirty Aprons.” on. (I just love these cute aprons).
These are the perfect little Valentine’s Day treats and would be great for a kid’s class party. With the cute conversation hearts on top of a fluffy bed of cream cheese frosting, these little Red Velvet Cookie Cups are hard to resist.

Ingredients
- 1 box of red velvet cake mix. -I used Duncan Hines
- 2 eggs
- 6 T. melted butter
- 1 t. vanilla
- 1 t. corn starch
- 3/4 c. powdered sugar
- 1 8 oz. package of cream cheese, softened
- 4 TBLS butter, softened
- 1 t. vanilla
- 2 c. powdered sugar
- sprinkles
- conversation hearts
Instructions
- Pre heat the oven to 350 degrees
- spray a mini muffin tin with baking spray
- In a large mixing bowl, mix the cake mix, eggs, butter, vanilla, and corn starch together until well blended. Add in the powdered sugar and mix until fully incorporated.
- USing a 1 or 1 1/2 inch cookie scoop or a spoon, fill each muffin hole about 3/4 of the way full.
- Bake for 9-12 minutes. Do not over bake.
- Set the pan on a cooling rack and, using the back of a melon baller or spoon, press indentations into the cookies. Allow to cool for 5 minutes before removing the cookies to a cooling rack to fully cool. About 30 minutes.
- Make the frosting by creaming together the cream cheese, butter, and vanilla. Slowly add the powdered sugar and mix until well blended.
- Using a pastry bag and tip, or a spoon, fill in the cookie cups with frosting and top each with sprinkles and a conversation heart. Makes between 30-35 cookies.
